Ingredients

  • 1.5 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 0.5 teaspoon Salt
  • 0.5 cup Unsalted butter, melted
  • 1 cup Sugar
  • 2 large Eggs
  • 1 cup Mashed bananas about 2-3 bananas
  • 1 teaspoon Vanilla extract
  • 0.5 cup Shredded coconut

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease a loaf pan.
  2. In a mixing bowl, whisk together the flour, baking soda, and salt.
  3. In another bowl, mix the melted butter and sugar. Add the eggs, mashed bananas, and vanilla extract. Mix well.
  4. Gradually add the dry ingredients to the wet ingredients. Mix until just combined.
  5. Fold in the shredded coconut.
  6. Pour the batter into the prepared loaf pan. Bake for 60 minutes or until a toothpick inserted into the center comes out clean.
  7. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
