- 1 cup Butter softened
- 1 cup Brown sugar packed
- 0.5 cup Granulated sugar
- 2 Eggs large
- 1 teaspoon Vanilla extract
- 1.5 cups All-purpose flour
- 1 teaspoon Baking soda
- 0.5 teaspoon Salt
- 3 cups Old-fashioned oats
- 1 cup Shredded coconut sweetened or unsweetened
- 1 cup Sliced almonds toasted
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large mixing bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
Beat in the eggs one at a time, then stir in the vanilla extract.
In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add to the butter mixture and mix well.
Stir in the oats, shredded coconut, and sliced almonds until evenly distributed.
Drop by rounded tablespoonfuls onto the prepared baking sheet. Flatten slightly with the back of a spoon.
Bake for 10-12 minutes, or until the edges are golden brown. Allow to cool on the baking sheet for a few minutes before transferring to a cooling rack to cool completely.
