  • 2 cups heavy cream not ultra-pasteurized

Instructions 

  1. Preheat your oven to 180°F (82°C).
  2. Pour the heavy cream into a baking dish, ensuring the cream is about 1-2 inches deep.
  3. Place the dish in the oven and let it cook for 12 hours. It's best to do this overnight.
  4. After 12 hours, remove the dish from the oven and let it cool to room temperature.
  5. Once cooled, cover the dish and refrigerate for at least 8 hours.
  6. After refrigeration, a thick layer of clotted cream will have formed on top. Scoop this layer off and transfer it to a jar or serving dish.
  7. Stir the clotted cream gently before serving. Enjoy with scones or your favorite pastries.
