Ingredients 

Main Ingredients

  • 2 pieces chicken breasts
  • 1 cup quinoa
  • 2 cups water
  • 1 piece orange (juiced)
  • 1 piece lemon (juiced)
  • 1 piece lime (juiced)
  • ¼ cup olive oil
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup chopped fresh parsley
  • ¼ cup chopped red onion
  • ½ cup cherry tomatoes (halved)
  • ¼ cup feta cheese (crumbled)

Instructions 

  1. Cook quinoa in water according to package instructions. Let it cool.
  2. Season chicken breasts with salt and pepper. Grill or pan-fry until cooked through. Slice into strips.
  3. In a large bowl, whisk together orange, lemon, and lime juices with olive oil, salt, and pepper.
  4. Add cooked quinoa, chicken, parsley, red onion, cherry tomatoes, and feta to the bowl. Toss to combine.
  5. Serve immediately or chill for later.
