Cider Braised Pork with Caramelized Onions

Main Ingredients
- 2 lbs Pork shoulder cut into chunks
- 2 large Onions sliced thin
- 2 cups Apple cider
- 2 tablespoon Olive oil
- 1 teaspoon Salt
- 1 teaspoon Black pepper freshly ground
- 3 cloves Garlic minced
- 1 teaspoon Thyme dried
1. Heat olive oil in a Dutch oven over medium heat.
2. Add pork chunks, season with salt and pepper, and brown on all sides. Remove and set aside.
3. In the same pot, add onions and cook until caramelized, about 15 minutes.
4. Add garlic and thyme, cook for another minute.
5. Return pork to the pot, pour in apple cider, bring to a simmer.
6. Cover and braise in a preheated oven at 325°F (165°C) for 2 hours, until pork is tender.
