Delicious homemade churros, crispy on the outside and soft on the inside.

Churros
- 1 cup water
- 2 tablespoon sugar
- ½ teaspoon salt
- ½ cup unsalted butter
- 1 cup all-purpose flour
- 2 large eggs beaten
- 1 teaspoon vanilla extract
- 1 cup sugar for coating
- 1 teaspoon ground cinnamon for coating
- 2 cups vegetable oil for frying
In a saucepan, combine water, 2 tablespoon sugar, salt, and butter. Bring to a boil over medium heat.
Remove from heat and stir in flour until mixture forms a ball.
Let the mixture cool for 10 minutes. Beat in eggs and vanilla until smooth.
Heat oil in a frying pan over medium-high heat.
Transfer dough to a piping bag fitted with a star tip. Pipe strips of dough into hot oil.
Fry until golden brown, about 2 minutes per side. Remove with tongs and drain on paper towels.
Combine 1 cup sugar and cinnamon in a shallow dish. Roll warm churros in the mixture.
