Main Ingredients
- 1 ½ cups all-purpose flour
- ½ cup cocoa powder
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- ½ cup vegetable oil
- ½ cup granulated sugar
- ½ cup brown sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 ½ cups shredded zucchini about 1 medium zucchini
- 1 cup chocolate chips
Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
In a large bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.
In another bowl, mix together vegetable oil, granulated sugar, brown sugar, eggs, and vanilla extract until well combined.
Add the wet ingredients to the dry ingredients and mix until just combined. Fold in the shredded zucchini and chocolate chips.
Divide the batter evenly among the muffin cups, filling each about ⅔ full.
Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
Allow muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
