Whoopie Pies
- 1 ¾ cups all-purpose flour
- ¾ cup unsweetened cocoa powder
- 1 ½ teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- ½ cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup milk
Salted Caramel Frosting
- ½ cup unsalted butter, softened
- 1 cup confectioners' sugar
- ½ cup caramel sauce
- ½ teaspoon salt
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
In a bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
In another bowl, beat butter and sugar until fluffy. Add egg and vanilla, beat until combined.
Gradually add dry ingredients to wet ingredients, alternating with milk. Mix until combined.
Drop batter by tablespoons onto prepared baking sheets. Bake for 10 minutes or until set. Cool completely.
For frosting, beat butter until creamy. Gradually add confectioners' sugar, caramel sauce, and salt. Beat until smooth.
Spread frosting on flat side of one cookie, top with another cookie. Repeat with remaining cookies.
