Chocolate Turtle Cheesecake

Crust
- 1.5 cups graham cracker crumbs
- ¼ cup sugar
- ½ cup butter, melted
Filling
- 24 oz cream cheese, softened
- 1 cup sugar
- 3 eggs
- 1 teaspoon vanilla extract
- 1 cup semi-sweet chocolate chips, melted
Topping
- 1 cup caramel sauce
- 1 cup pecans, chopped
- ½ cup semi-sweet chocolate chips
Preheat oven to 325°F (163°C).
Mix graham cracker crumbs, sugar, and melted butter in a bowl. Press into the bottom of a springform pan.
In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla. Stir in melted chocolate until well combined. Pour over crust.
Bake for 55-60 minutes or until center is set. Cool on a wire rack for 10 minutes. Run a knife around edge of pan to loosen; cool 1 hour longer. Refrigerate overnight.
Before serving, drizzle caramel sauce over the cheesecake and sprinkle with chopped pecans and chocolate chips.
