Ingredients 

Crust

  • 1.5 cups graham cracker crumbs
  • ¼ cup sugar
  • ½ cup butter, melted

Filling

  • 24 oz cream cheese, softened
  • 1 cup sugar
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips, melted

Topping

  • 1 cup caramel sauce
  • 1 cup pecans, chopped
  • ½ cup semi-sweet chocolate chips

Instructions 

  1. Preheat oven to 325°F (163°C).
  2. Mix graham cracker crumbs, sugar, and melted butter in a bowl. Press into the bottom of a springform pan.
  3. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla. Stir in melted chocolate until well combined. Pour over crust.
  4. Bake for 55-60 minutes or until center is set. Cool on a wire rack for 10 minutes. Run a knife around edge of pan to loosen; cool 1 hour longer. Refrigerate overnight.
  5. Before serving, drizzle caramel sauce over the cheesecake and sprinkle with chopped pecans and chocolate chips.
