- 4 large eggs, separated
- ½ cup granulated sugar
- ¼ cup unsweetened cocoa powder
- ½ cup dark chocolate, melted
- 1 teaspoon vanilla extract
- ¼ teaspoon cream of tartar
- ¼ teaspoon salt
Preheat your oven to 375°F (190°C). Grease the soufflé dishes with butter and dust with sugar.
In a mixing bowl, whisk the egg yolks with half of the sugar until pale and thick. Add the cocoa powder, melted chocolate, and vanilla extract. Mix until smooth.
In another bowl, beat the egg whites with cream of tartar and salt until soft peaks form. Gradually add the remaining sugar and beat until stiff peaks form.
Gently fold the egg whites into the chocolate mixture in three additions. Be careful not to deflate the mixture.
Spoon the mixture into the prepared soufflé dishes. Run your thumb around the edge to help the soufflé rise evenly.
Bake for 20-25 minutes, until the soufflés have risen and are set. Serve immediately.
