Ingredients 

Main Ingredients

  • 1.5 cups heavy cream
  • 0.5 cup whole milk
  • 4 oz bittersweet chocolate, chopped
  • 4 large egg yolks
  • 0.25 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Instructions 

  1. Preheat oven to 325°F (160°C).
  2. In a saucepan, heat cream and milk until just simmering.
  3. Remove from heat and add chopped chocolate. Stir until melted and smooth.
  4. In a bowl, whisk egg yolks, sugar, vanilla, and salt.
  5. Gradually whisk in the chocolate mixture.
  6. Strain the mixture and divide among ramekins.
  7. Place ramekins in a baking dish and add hot water halfway up the sides.
  8. Bake for 30 minutes until set but still slightly jiggly in the center.
  9. Cool to room temperature, then refrigerate for at least 2 hours before serving.
