Whoopie Pies
- 2 cups all-purpose flour
- ½ cup unsweetened cocoa powder
- 1 teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- 1 cup butter softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup buttermilk
Peppermint Filling
- ½ cup butter softened
- 1 ½ cups powdered sugar
- 1 teaspoon peppermint extract
- 1 tablespoon milk
Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
In a bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.
In another bowl, beat butter and sugar until fluffy. Add egg and vanilla, mix well.
Gradually add dry ingredients to wet ingredients, alternating with buttermilk. Mix until smooth.
Drop batter by tablespoons onto prepared baking sheets. Bake for 10 minutes or until set.
For filling, beat butter until creamy. Gradually add powdered sugar, peppermint extract, and milk. Beat until fluffy.
Spread filling on flat side of half the cookies. Top with remaining cookies.
