Crust
- 1 cup all-purpose flour
- ½ cup unsalted butter cold and cubed
- ¼ cup granulated sugar
Filling
- 3 large eggs beaten
- 1 cup light corn syrup
- 1 cup granulated sugar
- 2 tablespoon unsalted butter melted
- 1 teaspoon vanilla extract
- 1 ½ cups pecans chopped
- 1 cup semi-sweet chocolate chips
Preheat oven to 350°F (175°C). Grease a 9x13 inch baking pan.
In a mixing bowl, combine flour, cold butter, and sugar. Mix until crumbly. Press into the bottom of the prepared pan.
Bake the crust for 15 minutes or until lightly golden. Remove from oven and set aside.
In another bowl, whisk together eggs, corn syrup, sugar, melted butter, and vanilla extract until smooth. Stir in pecans and chocolate chips.
Pour the filling over the baked crust. Spread evenly.
Bake for 30 minutes or until set. Cool completely before cutting into bars.
