Ingredients 

Crust

  • 1 ½ cups graham cracker crumbs
  • ¼ cup sugar
  • ½ cup butter, melted

Filling

  • 1 cup heavy cream
  • 8 oz semi-sweet chocolate, chopped
  • 3 large eggs, separated
  • ¼ cup sugar
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter. Press mixture into a pie dish to form the crust.
  3. Bake crust for 10 minutes. Let cool.
  4. In a saucepan, heat heavy cream until just boiling. Remove from heat and add chopped chocolate. Stir until smooth.
  5. In a separate bowl, beat egg yolks with sugar until thick and pale. Add to chocolate mixture along with vanilla extract.
  6. In another bowl, beat egg whites until stiff peaks form. Fold into chocolate mixture.
  7. Pour filling into cooled crust. Chill in the refrigerator for at least 2 hours before serving.
