Ingredients 

Choux Pastry

  • ½ cup Butter
  • 1 cup Water
  • 1 cup All-purpose flour
  • 4 Eggs

Filling

  • 2 cups Heavy cream
  • ¼ cup Sugar
  • 1 teaspoon Vanilla extract

Chocolate Glaze

  • 4 oz Dark chocolate
  • ½ cup Heavy cream

Instructions 

  1. Preheat oven to 400°F (200°C).
  2. In a saucepan, combine butter and water. Bring to a boil.
  3. Add flour and stir until mixture forms a ball.
  4. Remove from heat and let cool for 5 minutes.
  5. Beat in eggs one at a time until smooth.
  6. Pipe dough onto baking sheet in 4-inch strips.
  7. Bake for 20-25 minutes or until golden brown.
  8. For filling, whip cream with sugar and vanilla until stiff peaks form.
  9. For glaze, heat cream and pour over chocolate. Stir until smooth.
  10. Cut eclairs in half, fill with cream, and top with chocolate glaze.
