Ingredients 

Cupcake Batter

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • ½ cup milk
  • ¼ cup vegetable oil
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ cup boiling water

Instructions 

  1. Preheat oven to 350°F (175°C) and line a cupcake pan with liners.
  2. In a large bowl, sift together flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add milk, vegetable oil, egg, and vanilla extract to the flour mixture and beat until well combined.
  4. Carefully add boiling water to the batter and mix until smooth.
  5. Fill cupcake liners halfway with batter.
  6. Bake for 20 minutes or until a toothpick inserted in the center comes out clean.
  7. Let cupcakes cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
