Ingredients

  • 3 cups sweetened shredded coconut
  • cup sweetened condensed milk
  • 1 teaspoon vanilla extract
  • 2 large egg whites
  • ¼ teaspoon salt
  • 1 cup semi-sweet chocolate chips melted

Instructions 

  1. Preheat oven to 325°F (165°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine shredded coconut, sweetened condensed milk, and vanilla extract.
  3. In a separate bowl, beat egg whites and salt until stiff peaks form.
  4. Gently fold egg whites into the coconut mixture.
  5. Drop tablespoon-sized mounds of the mixture onto the prepared baking sheet.
  6. Bake for 20-25 minutes, or until the edges are golden brown.
  7. Let cool completely on a wire rack. Once cooled, dip the bottoms of the macaroons in melted chocolate and place back on the parchment paper to set.
