  • 1 cup sugar
  • 0.5 cup cocoa powder
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 1 cup coconut milk
  • 0.5 cup vegetable oil
  • 2 teaspoon vanilla extract
  • 2 eggs
  • 1 cup shredded coconut

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9-inch cake pan.
  2. In a large mixing bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt.
  3. Add the coconut milk, vegetable oil, vanilla extract, and eggs. Mix until well combined.
  4. Fold in the shredded coconut.
  5. Pour the batter into the prepared cake pan and bake for 35 minutes, or until a toothpick inserted into the center comes out clean.
  6. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
