- 2 cups Rolled Oats
- 1 cup Milk
- 2 Eggs beaten
- ¼ cup Maple Syrup
- 1 teaspoon Vanilla Extract
- ½ teaspoon Baking Powder
- ½ teaspoon Cinnamon
- ¼ teaspoon Salt
- ½ cup Chocolate Chips
Preheat your oven to 350°F (175°C). Grease a muffin tin or line with paper liners.
In a large mixing bowl, combine the oats, milk, beaten eggs, maple syrup, and vanilla extract. Mix well.
Add the baking powder, cinnamon, and salt to the mixture. Stir until well combined.
Fold in the chocolate chips.
Divide the mixture evenly among the muffin cups.
Bake for 25 minutes or until the tops are golden brown and a toothpick inserted into the center comes out clean.
Let the oatmeal cups cool in the tin for a few minutes before transferring to a wire rack to cool completely.
