Ingredients 

Cookie Dough

  • 1 cup Almond Flour
  • 1 cup All-Purpose Flour
  • ½ cup Unsweetened Cocoa Powder
  • ½ teaspoon Salt
  • ½ cup Granulated Sugar
  • ½ cup Brown Sugar
  • 1 cup Unsalted Butter softened
  • 1 teaspoon Vanilla Extract
  • 1 large Egg

Filling

  • ½ cup Raspberry Jam
  • ¼ cup Powdered Sugar for dusting

Instructions 

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, whisk together almond flour, all-purpose flour, cocoa powder, and salt.
  3. In another bowl, beat together granulated sugar, brown sugar, and butter until light and fluffy.
  4. Add vanilla extract and egg to the butter mixture and beat until combined.
  5. Gradually add the dry ingredients to the wet ingredients and mix until just combined.
  6. Roll out the dough on a floured surface to about ¼ inch thickness. Use a cookie cutter to cut out shapes.
  7. Place the cookies on a baking sheet and bake for 10-12 minutes. Let them cool on a cooling rack.
  8. Once cooled, spread raspberry jam on the bottom of one cookie and sandwich with another cookie. Dust with powdered sugar.
