Main Ingredients
- 2 tablespoon olive oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 carrot, diced
- 1 celery stalk, diced
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 0.5 teaspoon smoked paprika
- 0.25 teaspoon cayenne pepper
- 2 cans chickpeas, drained and rinsed
- 1 can diced tomatoes
- 2 cups vegetable broth
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Heat olive oil in a large pot over medium heat.
Add onion, garlic, carrot, and celery. Cook until softened, about 5 minutes.
Stir in cumin, coriander, smoked paprika, and cayenne pepper. Cook for 1 minute.
Add chickpeas, diced tomatoes, and vegetable broth. Bring to a boil.
Reduce heat and simmer for 20-25 minutes.
Season with salt and pepper to taste.
Garnish with fresh parsley before serving.
