Ingredients 

Main Ingredients

  • 1 tablespoon Olive oil
  • 1 large Onion, chopped
  • 2 cloves Garlic, minced
  • 1 tablespoon Ginger, minced
  • 1 tablespoon Curry powder
  • 1 teaspoon Ground cumin
  • 1 can Diced tomatoes (400g)
  • 1 can Coconut milk (400ml)
  • 2 cans Chickpeas, drained and rinsed (400g each)
  • 4 cups Fresh spinach
  • to taste Salt and pepper

Instructions 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Add the garlic and ginger, and cook for another 2 minutes.
  4. Stir in the curry powder and ground cumin, and cook for 1 minute.
  5. Add the diced tomatoes and coconut milk, and bring to a simmer.
  6. Add the chickpeas and spinach, and cook until the spinach is wilted, about 5 minutes.
  7. Season with salt and pepper to taste, and serve hot.
