Instructions
Heat olive oil in a large pot over medium heat.
Add chopped onion and cook until soft, about 5 minutes.
Stir in minced garlic, ground cumin, and smoked paprika. Cook for another minute.
Add chickpeas, diced tomatoes, and vegetable broth. Bring to a boil.
Reduce heat and simmer for 20 minutes.
Season with salt and pepper to taste.
Serve hot, garnished with fresh parsley if desired.
