Ingredients 

Main Ingredients

  • 1 lb Chicken breast boneless, skinless
  • 1 tablespoon Olive oil
  • 1 medium Onion chopped
  • 3 cloves Garlic minced
  • 1 teaspoon Ground cumin
  • 1 teaspoon Chili powder
  • 4 cups Chicken broth low sodium
  • 1 can Diced tomatoes 14.5 oz can
  • 1 can Black beans 15 oz can, drained and rinsed
  • 1 cup Corn kernels fresh or frozen
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black pepper to taste
  • 1 handful Cilantro chopped, for garnish
  • 1 cup Tortilla chips crushed, for garnish

Instructions 

  1. Heat olive oil in a large pot over medium heat. Add chopped onion and cook until translucent, about 5 minutes.
  2. Add minced garlic, ground cumin, and chili powder. Cook for another minute until fragrant.
  3. Add chicken broth, diced tomatoes, black beans, and corn. Bring to a boil.
  4. Reduce heat and simmer for 20 minutes. Add salt and pepper to taste.
  5. While the soup is simmering, cook the chicken breast in a separate pan until fully cooked. Shred the chicken and add it to the soup.
  6. Serve hot, garnished with chopped cilantro and crushed tortilla chips.
