Ingredients 

Main Ingredients

  • 1 lb Chicken Breast boneless, skinless
  • 4 cups Chicken Broth
  • 1 cup Carrots sliced
  • 1 cup Celery sliced
  • 1 cup Onion chopped
  • 2 cloves Garlic minced
  • 1 teaspoon Salt to taste
  • 1 teaspoon Black Pepper to taste
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Dried Parsley

Instructions 

  1. 1. In a large pot, heat a bit of oil over medium heat. Add the onions, garlic, carrots, and celery. Cook until softened, about 5 minutes.
  2. 2. Add the chicken breast and chicken broth to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes.
  3. 3. Remove the chicken breast, shred it with two forks, and return it to the pot.
  4. 4. Add salt, pepper, thyme, and parsley. Simmer for another 5 minutes. Adjust seasoning to taste.
  5. 5. Serve hot and enjoy!
