Ingredients 

Marinade

  • 1 lb chicken breast, cut into strips
  • 1 cup coconut milk
  • 2 tablespoon soy sauce
  • 1 tablespoon brown sugar
  • 2 cloves garlic, minced
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander

Peanut Sauce

  • ½ cup peanut butter
  • ½ cup coconut milk
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1 tablespoon brown sugar
  • 1 clove garlic, minced

Instructions 

  1. 1. In a bowl, mix coconut milk, soy sauce, brown sugar, minced garlic, turmeric, and coriander. Add chicken strips and marinate for at least 30 minutes.
  2. 2. Thread marinated chicken onto skewers.
  3. 3. Preheat grill to medium-high heat. Grill chicken skewers for 4-5 minutes on each side, until fully cooked.
  4. 4. For the peanut sauce, combine peanut butter, coconut milk, soy sauce, lime juice, brown sugar, and minced garlic in a small saucepan. Cook over low heat until smooth and heated through.
  5. 5. Serve chicken skewers with peanut sauce on the side.
