Ingredients 

Main Ingredients

  • 1 cup Quinoa
  • 2 cups Chicken broth
  • 1 lb Chicken breast, diced
  • 1 tablespoon Olive oil
  • 1 cup Cherry tomatoes, halved
  • 1 cup Cucumber, diced
  • 1 cup Feta cheese, crumbled
  • 1 tablespoon Lemon juice
  • to taste Salt and pepper

Instructions 

  1. Rinse quinoa under cold water.
  2. In a saucepan, bring chicken broth to a boil. Add quinoa, reduce heat, cover, and simmer for 15 minutes.
  3. In a skillet, heat olive oil over medium heat. Add diced chicken, season with salt and pepper, and cook until no longer pink.
  4. In a mixing bowl, combine cooked quinoa, chicken, cherry tomatoes, cucumber, feta cheese, and lemon juice. Toss to combine.
  5. Serve immediately or refrigerate for later.
