Salad Ingredients
- 2 cups cooked pasta any type
- 2 cups cooked chicken breast diced
- 1 cup cherry tomatoes halved
- 1 cup cucumber diced
- ½ cup red onion thinly sliced
- ¼ cup black olives sliced
Dressing Ingredients
- 1 cup Greek yogurt
- 2 tablespoon olive oil
- 1 tablespoon lemon juice freshly squeezed
- 1 teaspoon dried oregano
- 1 clove garlic minced
- to taste salt and pepper
1. Cook pasta according to package instructions. Drain and let cool.
2. In a large mixing bowl, combine cooked pasta, chicken, cherry tomatoes, cucumber, red onion, and black olives.
3. In a separate bowl, whisk together Greek yogurt, olive oil, lemon juice, dried oregano, minced garlic, salt, and pepper.
4. Pour the dressing over the salad and toss to combine.
5. Serve immediately or refrigerate for later.
