- 2 cups rolled oats
- 1 cup shredded coconut
- ½ cup honey
- ½ cup peanut butter
- ¼ cup coconut oil
- 1 teaspoon vanilla extract
- ¼ teaspoon salt
Preheat your oven to 350°F (175°C). Line a baking pan with parchment paper.
In a mixing bowl, combine the oats and shredded coconut.
In a small saucepan, heat the honey, peanut butter, and coconut oil over low heat until melted and smooth. Stir in the vanilla extract and salt.
Pour the wet mixture over the oats and coconut. Stir until well combined.
Press the mixture firmly into the prepared baking pan.
Bake for 20-25 minutes, or until the edges are golden brown.
Let cool completely before cutting into bars.
