Ingredients 

Crust

  • 1.5 cups all-purpose flour
  • 0.5 cup unsalted butter, chilled and diced
  • 0.25 cup granulated sugar
  • 0.25 teaspoon salt
  • 2 tablespoons cold water

Filling

  • 4 cups fresh cherries, pitted
  • 0.5 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, mix flour, sugar, and salt. Cut in butter until mixture resembles coarse crumbs. Stir in water until dough forms.
  3. Roll out dough and place in a tart pan. Trim excess dough.
  4. In another bowl, mix cherries, sugar, cornstarch, vanilla, and lemon juice. Pour into crust.
  5. Bake for 45 minutes or until crust is golden and filling is bubbly. Cool before serving.
