Cherry Almond Tart Recipe

Tart Crust
- 1 ¼ cups all-purpose flour
- ½ cup unsalted butter cold and cubed
- 2 tablespoon sugar
- ¼ teaspoon salt
- 3-4 tablespoon ice water
Filling
- 1 cup almond flour
- ½ cup sugar
- ½ cup unsalted butter softened
- 2 large eggs
- ½ teaspoon almond extract
- 1 cup cherries pitted and halved
Preheat your oven to 350°F (175°C).
In a mixing bowl, combine flour, sugar, and salt for the crust. Cut in the cold butter until the mixture resembles coarse crumbs. Add ice water, one tablespoon at a time, until the dough comes together.
Press the dough into a tart pan. Prick the bottom with a fork and bake for 15 minutes. Let it cool.
For the filling, cream together the butter and sugar until light and fluffy. Add eggs one at a time, then mix in almond flour and almond extract.
Spread the filling into the cooled tart crust. Arrange the cherries on top.
Bake for 25 minutes or until the filling is set and golden. Let it cool before serving.
