Ingredients 

Cookie Dough

  • 1 cup unsalted butter softened
  • 0.75 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon almond extract
  • 2 cups all-purpose flour
  • 0.5 cup almond flour
  • 0.25 teaspoon salt

Filling

  • 0.75 cup cherry preserves
  • 0.25 cup powdered sugar for dusting

Instructions 

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together the butter and granulated sugar until light and fluffy.
  3. Mix in the vanilla extract and almond extract.
  4. Gradually add the all-purpose flour, almond flour, and salt. Mix until combined.
  5. Divide the dough into two equal parts. Roll each part out on a floured surface to about ¼ inch thickness.
  6. Use a cookie cutter to cut out shapes. Use a smaller cutter to cut out the centers of half of the cookies.
  7. Place the cookies on the prepared baking sheet. Bake for 10-12 minutes or until the edges are lightly golden.
  8. Allow cookies to cool completely. Spread cherry preserves on the whole cookies and top with the cut-out cookies. Dust with powdered sugar.
