Cookie Dough
- 1 cup unsalted butter softened
- 0.75 cup granulated sugar
- 1 teaspoon vanilla extract
- 0.5 teaspoon almond extract
- 2 cups all-purpose flour
- 0.5 cup almond flour
- 0.25 teaspoon salt
Filling
- 0.75 cup cherry preserves
- 0.25 cup powdered sugar for dusting
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a mixing bowl, cream together the butter and granulated sugar until light and fluffy.
Mix in the vanilla extract and almond extract.
Gradually add the all-purpose flour, almond flour, and salt. Mix until combined.
Divide the dough into two equal parts. Roll each part out on a floured surface to about ¼ inch thickness.
Use a cookie cutter to cut out shapes. Use a smaller cutter to cut out the centers of half of the cookies.
Place the cookies on the prepared baking sheet. Bake for 10-12 minutes or until the edges are lightly golden.
Allow cookies to cool completely. Spread cherry preserves on the whole cookies and top with the cut-out cookies. Dust with powdered sugar.
