Instructions
Preheat your oven to 375°F (190°C).
In a mixing bowl, combine cherries, sugar, almond extract, and cornstarch. Set aside.
Roll out the pie crust and cut into 8 equal rectangles.
Place a spoonful of the cherry mixture onto one half of each rectangle. Fold over and seal the edges with a fork.
Brush the tops with beaten egg.
Place the hand pies on a baking sheet and bake for 20-25 minutes, or until golden brown.
Let cool slightly before serving.
