Ingredients

  • 1 cup Graham Cracker Crumbs
  • ¼ cup Sugar
  • ¼ cup Butter, melted
  • 8 oz Cream Cheese, softened
  • ¼ cup Sugar
  • 1 teaspoon Vanilla Extract
  • 1 Egg

Instructions 

  1. Preheat oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. In a mixing bowl, combine graham cracker crumbs, ¼ cup sugar, and melted butter. Mix until well combined.
  3. Press about 1 tablespoon of the mixture into the bottom of each muffin cup. Bake for 5 minutes, then remove from oven.
  4. In another bowl, beat cream cheese and ¼ cup sugar until smooth. Add vanilla extract and egg, and beat until well combined.
  5. Spoon the cream cheese mixture over the crusts in the muffin tin, filling each cup almost to the top.
  6. Bake for 15 minutes, or until the centers are set. Allow to cool completely before serving.
