Instructions
Heat olive oil in a large pot over medium heat.
Add chopped onion and cook until translucent, about 5 minutes.
Add minced garlic, ground cumin, ground coriander, and turmeric. Cook for another minute.
Add cauliflower florets, chickpeas, vegetable broth, and diced tomatoes. Bring to a boil.
Reduce heat and let it simmer for about 20 minutes, until cauliflower is tender.
Season with salt and black pepper to taste. Serve hot.
