Ingredients 

Main Ingredients

  • 1 head Cauliflower cut into florets
  • 1 can Chickpeas drained and rinsed
  • 1 tablespoon Olive Oil
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 1 teaspoon Ground Cumin
  • 1 teaspoon Ground Coriander
  • 1 teaspoon Turmeric
  • 4 cups Vegetable Broth
  • 1 can Diced Tomatoes
  • to taste Salt
  • to taste Black Pepper

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion and cook until translucent, about 5 minutes.
  3. Add minced garlic, ground cumin, ground coriander, and turmeric. Cook for another minute.
  4. Add cauliflower florets, chickpeas, vegetable broth, and diced tomatoes. Bring to a boil.
  5. Reduce heat and let it simmer for about 20 minutes, until cauliflower is tender.
  6. Season with salt and black pepper to taste. Serve hot.
