Cashew Chicken Stir-Fry

Main Ingredients
- 1 lb chicken breast cut into bite-sized pieces
- 1 cup cashews unsalted
- 2 tablespoon soy sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon sesame oil
- 2 cloves garlic minced
- 1 inch ginger grated
- 1 cup bell peppers sliced
- 1 cup broccoli florets
- 2 tablespoon vegetable oil
Heat 1 tablespoon of vegetable oil in a wok over medium-high heat.
Add chicken and stir-fry until cooked through, about 5-7 minutes. Remove and set aside.
In the same wok, add remaining vegetable oil. Add garlic and ginger, stir-fry for 1 minute.
Add bell peppers and broccoli, stir-fry for 3-4 minutes until tender-crisp.
Return chicken to the wok. Add soy sauce, hoisin sauce, and sesame oil. Stir well to combine.
Stir in cashews and cook for another 2 minutes. Serve hot.
