Ingredients 

Main Ingredients

  • 1 lb chicken breast cut into bite-sized pieces
  • 1 cup cashews unsalted
  • 2 tablespoon soy sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon sesame oil
  • 2 cloves garlic minced
  • 1 inch ginger grated
  • 1 cup bell peppers sliced
  • 1 cup broccoli florets
  • 2 tablespoon vegetable oil

Instructions 

  1. Heat 1 tablespoon of vegetable oil in a wok over medium-high heat.
  2. Add chicken and stir-fry until cooked through, about 5-7 minutes. Remove and set aside.
  3. In the same wok, add remaining vegetable oil. Add garlic and ginger, stir-fry for 1 minute.
  4. Add bell peppers and broccoli, stir-fry for 3-4 minutes until tender-crisp.
  5. Return chicken to the wok. Add soy sauce, hoisin sauce, and sesame oil. Stir well to combine.
  6. Stir in cashews and cook for another 2 minutes. Serve hot.
