- 1 cup Cashews roasted and salted
- 1 cup Sugar
- ¼ cup Butter unsalted
- ¼ cup Heavy cream
- 1 teaspoon Vanilla extract
Line a baking sheet with parchment paper and set aside.
In a saucepan, melt the sugar over medium heat until it turns a golden brown.
Add the butter and stir until melted and combined.
Slowly add the heavy cream while stirring continuously.
Remove from heat and stir in the vanilla extract.
Mix in the cashews until they are fully coated with the caramel.
Spoon clusters of the mixture onto the prepared baking sheet.
Let the clusters cool completely before serving.
