Ingredients

  • 2 cups grated carrots
  • 2 cups grated parsnips
  • 1 cup finely chopped onion
  • 2 large eggs beaten
  • ¼ cup all-purpose flour
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup vegetable oil for frying

Instructions 

  1. 1. Grate the carrots and parsnips, and place them in a large mixing bowl.
  2. 2. Add the chopped onion, beaten eggs, flour, salt, and pepper to the bowl. Mix well.
  3. 3. Heat the vegetable oil in a frying pan over medium heat.
  4. 4. Scoop about ¼ cup of the mixture for each latke and flatten it in the pan. Fry until golden brown on both sides, about 3-4 minutes per side.
  5. 5. Drain on paper towels and serve warm.
