Carrot Parsnip Latkes Recipe
These crispy latkes made with carrots and parsnips are a delicious twist on the traditional potato version.

- 2 cups grated carrots
- 2 cups grated parsnips
- 1 cup finely chopped onion
- 2 large eggs beaten
- ¼ cup all-purpose flour
- 1 teaspoon salt
- ½ teaspoon black pepper
- ½ cup vegetable oil for frying
1. Grate the carrots and parsnips, and place them in a large mixing bowl.
2. Add the chopped onion, beaten eggs, flour, salt, and pepper to the bowl. Mix well.
3. Heat the vegetable oil in a frying pan over medium heat.
4. Scoop about ¼ cup of the mixture for each latke and flatten it in the pan. Fry until golden brown on both sides, about 3-4 minutes per side.
5. Drain on paper towels and serve warm.
