Main Ingredients
- 2 large carrots, grated
- 2 large parsnips, grated
- 1 small onion, finely chopped
- 2 eggs, beaten
- ½ cup flour
- Salt and pepper to taste
- Olive oil for frying
Mix grated carrots, parsnips, and chopped onion in a bowl.
Add beaten eggs, flour, salt, and pepper. Mix well.
Heat olive oil in a pan over medium heat.
Scoop spoonfuls of the mixture into the pan, flattening them slightly.
Fry until golden brown on both sides, about 3-4 minutes per side.
Drain on paper towels and serve warm.
