Instructions
Heat olive oil in a large pot over medium heat.
Add chopped onion and cook until translucent, about 5 minutes.
Add minced garlic and grated ginger, cook for another 2 minutes.
Add chopped carrots and vegetable broth. Bring to a boil, then reduce heat and simmer for 20 minutes, or until carrots are tender.
Remove from heat and let cool slightly. Blend the soup in batches until smooth.
Return the soup to the pot, stir in coconut milk, and season with salt and pepper to taste. Heat through before serving.
