Ingredients 

Carrot Cake Layer

  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon salt
  • ½ cup vegetable oil
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup finely grated carrots

Cheesecake Layer

  • 16 oz cream cheese, softened
  • ½ cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

Instructions 

  1. Preheat oven to 350°F (175°C). Grease a 9-inch springform pan.
  2. In a bowl, combine flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  3. In another bowl, whisk together oil, granulated sugar, brown sugar, eggs, and vanilla extract.
  4. Mix dry ingredients into wet ingredients until just combined. Fold in grated carrots.
  5. Pour carrot cake batter into the prepared pan and spread evenly.
  6. In a large bowl, beat cream cheese and sugar until smooth. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
  7. Pour cheesecake batter over carrot cake layer in the pan.
  8. Bake in preheated oven for 50-60 minutes, or until the center is set. Let cool completely before removing from pan.
