Ingredients 

Main Ingredients

  • 1 cup grated carrots
  • 1 cup grated apples
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • 2 eggs
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • 1 cup sugar

Instructions 

  1. Preheat your oven to 350°F (175°C). Grease a muffin tin or line with muffin liners.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, and salt.
  3. In another bowl, beat the eggs and then add the oil, vanilla, and sugar. Mix well.
  4. Stir the wet ingredients into the dry ingredients until just combined. Fold in the grated carrots and apples.
  5. Spoon the batter into the prepared muffin tin, filling each cup about ⅔ full.
  6. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  7. Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
