Caramel Apple Cinnamon Scones

- 2 cups all-purpose flour
- ¼ cup granulated sugar
- 1 tablespoon baking powder
- ½ teaspoon salt
- 1 teaspoon ground cinnamon
- ½ cup unsalted butter, cold and cubed
- 1 cup apple, peeled and diced
- ½ cup heavy cream
- 1 teaspoon vanilla extract
- ½ cup caramel sauce for drizzling
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large mixing bowl, whisk together flour, sugar, baking powder, salt, and cinnamon.
Cut in the cold, cubed butter until the mixture resembles coarse crumbs.
Stir in the diced apple.
In a separate bowl, mix together the heavy cream and vanilla extract. Pour into the dry ingredients and stir until just combined.
Turn the dough out onto a floured surface and knead gently. Pat into a circle about 1 inch thick. Cut into 8 wedges and place on the prepared baking sheet.
Bake for 18-20 minutes, or until golden brown. Let cool slightly.
Drizzle with caramel sauce before serving.
