Caramel Apple Cheesecake

Crust
- 1.5 cups graham cracker crumbs
- 0.25 cup melted butter
Filling
- 24 oz cream cheese, softened 3 (8 oz) packages
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
Topping
- 3 medium apples, peeled and sliced
- 0.5 cup caramel sauce
- 0.25 cup chopped pecans
Preheat oven to 350°F (175°C).
Mix graham cracker crumbs and melted butter. Press into the bottom of a 9-inch springform pan.
Beat cream cheese, sugar, and vanilla until smooth. Add eggs one at a time, mixing well after each.
Pour over crust. Arrange apple slices on top.
Bake for 1 hour or until the center is set. Cool.
Drizzle with caramel sauce and sprinkle with pecans before serving.
