Ingredients

  • 1 large butternut squash peeled and cubed
  • 1 sheet puff pastry thawed
  • 1 cup ricotta cheese
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 10 leaves sage fresh, chopped

Instructions 

  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, toss the butternut squash cubes with olive oil, salt, and pepper.
  3. Spread the squash on a baking sheet and roast for 25 minutes, until tender.
  4. Roll out the puff pastry and fit it into a tart pan.
  5. Spread the ricotta cheese evenly over the pastry.
  6. Arrange the roasted squash on top of the ricotta.
  7. Sprinkle the chopped sage over the squash.
  8. Bake the tart for 15 minutes, until the pastry is golden and crisp.
  9. Let the tart cool slightly before serving.
