Ingredients 

Main Ingredients

  • 1 piece Butternut Squash peeled and cubed
  • 200 g Mushrooms sliced
  • 1 sheet Puff Pastry thawed
  • 1 tablespoon Olive Oil
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper
  • 1 teaspoon Thyme fresh or dried

Instructions 

  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, toss the butternut squash cubes with olive oil, salt, and pepper.
  3. Spread the squash on a baking sheet and roast for 20 minutes.
  4. While the squash is roasting, roll out the puff pastry on a floured surface.
  5. Once the squash is done, scatter it and the sliced mushrooms over the puff pastry.
  6. Sprinkle thyme over the top and bake for another 20 minutes until the pastry is golden and crispy.
