Ingredients 

Scone Ingredients

  • 2 cups all-purpose flour
  • ¼ cup granulated sugar
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 tablespoon dried culinary lavender
  • ½ cup unsalted butter, cold and cubed
  • 1 cup buttermilk
  • 1 egg, beaten (for egg wash)

Instructions 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, and dried lavender.
  3. Add the cold, cubed butter to the dry ingredients. Use a pastry cutter or your fingers to cut the butter into the flour mixture until it resembles coarse crumbs.
  4. Pour in the buttermilk and stir until just combined. Do not overmix.
  5. Turn the dough out onto a floured surface and gently knead it a few times until it comes together. Pat the dough into a circle about 1 inch thick.
  6. Cut the dough into 8 wedges and place them on the prepared baking sheet. Brush the tops with the beaten egg.
  7. Bake for 18-20 minutes, or until the scones are golden brown. Transfer to a cooling rack and let cool slightly before serving.
