Bumbleberry Pie

Ingredients 

Filling

  • 2 cups Blueberries
  • 2 cups Raspberries
  • 2 cups Blackberries
  • 1 cup Sugar
  • ¼ cup Cornstarch
  • 1 tablespoon Lemon juice

Crust

  • 2 cups All-purpose flour
  • 1 cup Butter cold and cubed
  • ¼ cup Ice water

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. In a large bowl, mix berries, sugar, cornstarch, and lemon juice. Set aside.
  3. In another bowl, combine flour and butter until crumbly. Gradually add ice water until dough forms.
  4. Roll out half the dough and place in a pie dish. Add berry mixture. Roll out remaining dough and place on top. Seal edges and cut slits for steam.
  5. Bake for 60 minutes or until crust is golden brown. Let cool before serving.
