Bruschetta Chicken Recipe With Zucchini Noodles

Main Ingredients
- 4 pieces Chicken Breasts
- 2 cups Cherry Tomatoes halved
- 2 cloves Garlic minced
- 1 cup Fresh Basil chopped
- 2 tablespoons Balsamic Vinegar
- 2 tablespoons Olive Oil
- 4 medium Zucchini spiralized
- to taste Salt and Pepper
1. Season the chicken breasts with salt and pepper.
2. Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the chicken breasts until golden brown and cooked through, about 6-7 minutes per side. Remove from skillet and set aside.
3. In the same skillet, add the remaining olive oil and minced garlic. Cook for about 1 minute until fragrant.
4. Add the cherry tomatoes and cook for another 2-3 minutes until they start to soften.
5. Stir in the balsamic vinegar and chopped basil. Cook for another minute and then remove from heat.
6. Spiralize the zucchini and add it to the skillet. Toss to combine with the tomato mixture.
7. Serve the chicken breasts on top of the zucchini noodles and tomato mixture. Garnish with additional basil if desired.
