Brownie Ice Cream Sandwiches

Brownie Batter
- 1 cup Butter melted
- 2 cups Sugar
- 4 Eggs
- 1 cup All-purpose flour
- ½ cup Cocoa powder
- 1 teaspoon Vanilla extract
- ½ teaspoon Salt
Ice Cream Filling
- 1 quart Vanilla ice cream softened
Preheat your oven to 350°F (175°C). Grease a baking pan.
In a mixing bowl, combine melted butter and sugar. Add eggs one at a time, beating well after each addition. Stir in vanilla.
In another bowl, whisk together flour, cocoa powder, and salt. Gradually add to the butter mixture, mixing until well combined.
Spread the batter evenly in the prepared baking pan. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean. Let cool completely.
Once cooled, cut the brownie into equal-sized squares. Spread softened ice cream on one brownie square and top with another to make a sandwich. Repeat with remaining brownies and ice cream.
Wrap each sandwich in plastic wrap and freeze for at least 1 hour before serving.
